Our black summer truffle is a natural product. Processing is limited to washing and pickling in brine. The intense truffle smell is missing, because we produce this summer truffle completely WITHOUT truffle flavouring. We therefore recommend this product exclusively for consumers who know and love the sensory properties of black summer truffles: the malty and mild mushroom scent. The taste is slightly nutty.
This type of truffle should not be confused with the white Alba truffle, which has an intense taste of white truffle and is only available fresh in winter.
Black summer truffle (Tuber aestivum Vittad.) 57%, water, salt
These black summer truffles smell of hazelnuts, mushrooms and forest soil. The flavour is mild, pleasantly nutty and earthy without bitterness with hints of mushroom. This product does not have an intense truffle odour, as it is produced without truffle flavouring.
Cut the black summer truffles into slices with a knife and heat gently in a frying pan with a little olive oil. Season with pepper and a little sea salt. The slices go well with creamy light sauces, truffle risotto or as a topping for mashed potatoes or egg dishes. Do not tip away the truffle jus in the glass, use it to cook stock or sauces.
