The Bergolive Tonda Iblea from Monte Iblei in south-eastern Sicily is prized by connoisseurs as one of the most intense olive varieties in Italy. Our organic DOP Monti Iblei olive oil, produced exclusively from this single olive variety, has won numerous international awards. For the perfect end result, the green olives, which are still half-ripe, must be carefully picked by hand on a steep slope. They are then washed and processed into grassy green olive oil in hydraulic presses within a few hours. The naturally cloudy olive oil is then filtered. It is awarded the IGP and DOP seal, the highest award for regionality and quality for food in Italy
