This olive paste is produced in the hills of Monti Iblei in south-eastern Sicily. The ripe, black Tonda Iblea olives are harvested in autumn and marinated in salt water for six months. The olives are then processed into a delicious olive paste with DOP Monti Iblei olive oil, sea salt and a pinch of chilli pepper.
