Our Caponata is produced in a small village at the foot of Mount Etna. Sun-ripened Italian vegetables are carefully sorted by hand, washed and diced. Then we gently fry it on different cooking levels so that each ingredient retains its optimum consistency. The aromatic vegetables are complemented with pine nuts, grapes, capers, fragrant basil and oregano. Then melt and caramelise the sugar in the middle of the pan and add the wine vinegar to the whole vegetable mixture to create the sweet and sour taste. The delicious warm caponata is carefully filled into glasses by hand and finished with high-quality DOP Monte Etna Extra Virgin Olive Oil.
