Our certified organic Aceto Balsamico Invecchiato IGP is always created according to the strict traditional process of making genuine Modena balsamic vinegar. The stewed must of the Trebbiano grape and the wine vinegar in the Acetaia are transferred from one wooden barrel to the next smaller one over many years. This lengthy procedure and the different wood types oak, chestnut and cherry ensure the dark colour and the unmistakable thick, velvety consistency.
