Our organic capers grow on the Sicilian island of Salina. In fastidious manual work the small buds of the caper bush are picked and fermented in sea salt for 90 days in our caper manufactory. After that, the delicate buds are ready for consumption. The salted capers are preserved in airtight jars with sea salt and thus remain durable for up to 2 years.

    • Organic capers from Salina, sea salt (20%)
    • The capers have an intense tart and sour taste. They are salty, mildly spicy and slightly bitter.
    • Before eating, properly desalt the capers in a bowl of cold water for several hours. Note that when cooking, do not overheat the capers. This destroys much of the flavor and texture. They are usually added at the end of cooking or served cold in salads.
