Capers – made from organic Pantelleria

Our capers grow on the Sicilian island of Pantelleria. The small buds of the caper bush are picked by hand immediately before flowering and dried for one day. As a result, they lose most of their liquid before they are soaked in sea salt. This is the only way to preserve capers as gently as possible.

    • The volcanic soil of Pantelleria gives the capers a unique flavour intensity. Tart and spicy, pleasantly bitter with a slightly spicy note and herb mustard flavour.
    • Before use, the capers should be rinsed and soaked in water for an hour. This will prevent the dish from tasting too salty. Also make sure that you only briefly cook the capers, if necessary. They go well with fish dishes, of course. But they also enhance every caponata and are a must for Vitello Tonnato and the legendary Pizza Napoli.
